Spices in Kerala cuisine

Spices play an important role in the “curries” of Kerala. Main ones are:

Cinnamon
Cloves
Cardamom
Pepper
Ginger
Garlic
Coriander
Turmeric
Chilly

A few fresh herbs are also used. Main ones are:

Curry leaves
Coriander
Mint

Tamarind, kodampuli (Garcinia Cambogia), and lime are used to make sour sauces.

Very popular sweet and sour dishes are - pulissery, puli inchy, inchy curry.
